Sterlet meat is very gently and not fibrous; while thermal processing it easily boils soft. Culinary specialists cook various dishes of sterlet, but especially wide and quite deserved popularity has steam sterlet, sterlet "ring" and sterlet soup. Sterlet is delicious, when boiled in white dry wine without any spices and even of salt.
